Recipe: Healthy Energy Bites

Hello everyone!

As part of one of my university assignments I had to come up with a business idea with a group of other students! We came up with ideas for selling energy bites. They went down very well and thought I would share one of the recipes...

These are the Granola Energy Bites. They are full of superfoods and are perfect for muscle repair and recovery due to the amount of amino acids they contain.

So easy to make and so tasty! Enjoy!

100g Blueberries
50g Honey
50g Coconut Oil
100g Oats
25g Sunflower Seeds
25g Pumpkin Seeds
25g Chia Seeds
25g Ground Almonds
50g Flaked Almonds
25g Raisins/Sultanas
25g Goji Berries
1tsp Ground Cinnamon

p.s. Feel free to add any other nuts or seeds you like! Just make sure if you add more dry ingredients add extra coconut oil or honey to make sure it binds together!

1. Put the blueberries into a pan with 1tbsp of warm water. Simmer until the blueberries are very soft. Then add the honey and coconut oil and keep stirring until it is all combined. It will be quite runny but that is what you want!

2. Combine all of the other ingredients into a big bowl. Add the blueberry mixture and stir well. Refrigerate for 15 minutes.

3. Remove from the fridge and divide into 18 portions and roll into balls (it is quite sticky!)

4. Refrigerate the balls for 1 hour before eating!

5. Enjoy! They will last for 5 days in the fridge.
